HACC’s ‘Exemplary’ Culinary Arts and Baking and Pastry Arts Programs Returning to Harrisburg Campus
New facilities to open in fall 2015 in Bruce E. Cooper Student Center
Summer 2015 is an exciting time for students in the Benjamin Olewine III Center for the Study of Culinary Arts and Baking and Pastry Arts at HACC, Central Pennsylvania’s Community College, as they prepare to return to the Harrisburg Campus for the 35th anniversary of the career program.
The Bruce E. Cooper Student Center’s kitchen is being renovated to include new and larger cooking and baking facilities, classrooms and a campus restaurant employing culinary arts and baking and pastry arts students. The move is scheduled to take place before fall 2015 classes begin on Aug. 24, 2015.
HACC’s Associate in Arts in culinary arts and culinary arts certificate are designated “exemplary,” the highest rating awarded by the American Culinary Federation Education Foundation (ACFEF) Accreditation Commission. HACC received the prestigious seven-year accreditation in summer 2012 from the ACFEF, the largest professional chef organization in North America, indicating the programs symbolize the highest educational standards.
Culinary Arts and Baking and Pastry Arts re-located to the Blue Ridge Country Club in January 2013 when the former C. Ted Lick Conference Center and adjacent Mumma Hall were closed for renovations to transform the facility to the Ted Lick Administration Building.
The programs have been expanded and reorganized to better meet the needs of students preparing to enter the profession. Students profit from diverse instructional techniques ranging from the classroom to on-campus labs and supervised on-the-job experiences through Hilton Harrisburg, Bricco and The Chef’s Apprentice, the newly designed campus restaurant. Students get hands-on training at three commercial restaurants, banquet operations and a retail dining venue.
The faculty/chefs include:
- Autumn Patti, program director – A HACC alumna who graduated from the program in 2001, she began her professional HACC career in 2002 and is now program director.
- Thomas E. Long, director of campus dining – A HACC alumnus who graduated in 1981, he holds the designations of Certified Executive Chef and American Academy of Chefs.
- David Mills, chef instructor – A HACC alumnus who graduated in 2014, he has more than 15 years of experience in the profession.
- Elizabeth Robison, adjunct faculty – A HACC alumna who graduated in 2006, she teaches weekend baking and pastry arts classes.
- Chad Brumbaugh, chef instructor – He is a graduate of the Culinary Institute of America.
- Casey Callahan, adjunct baking instructor – She also is executive pastry chef at Ciao! Bakery.
Approximately 130 students are currently enrolled in the programs that include a 75-credit Associate in Arts in culinary arts, a 47-credit culinary arts certificate, a 27-credit culinary arts/catering diploma and a 31-credit baking and pastry arts certificate. Evening and weekend classes are offered in addition to week-day classes.

HACC Student Sacrifices for Education but Knows It’s Worth It
Scholarship cycle opens to help alleviate barriers to education
For a mother of four children who is putting herself through college, financial support is a big deal. Thanks to the HACC Foundation, Thelma Washington is one of many students at HACC, Central Pennsylvania’s Community College, to receive scholarships from the HACC Foundation.
Washington returned to HACC to pursue a credential in the fields of technology and real estate, so she can help those who are struggling to find affordable housing. She explained in her scholarship essay, “I too have struggled to provide for my household with our budget. But to sacrifice for my education is very important as a 52-year old adult. Receiving one or several scholarships will help me stay focused on my educational goal and yet provide for my household. I am starting over with my education to help myself and others who may be homeless or perhaps sleeping in their cars with their family. I know what it’s like to lose a job and a home. But I’ve come to this conclusion: As long as there is breath in your body, God has given one the opportunity to start over again.”
Washington took the step to start over and became a recipient of the Millard C. Freysinger Scholarship. “The scholarship helped me get my books and the materials that I needed. It really helped me to not struggle as hard as I would have,” said Washington.
The scholarships are provided to help students pay for their tuition, books and fees. The scholarship cycle opens Aug. 4, 2015. With more than 200 scholarships available, HACC students are encouraged to apply by Oct. 1 for funds that will financially assist them during the spring 2016 term. Students must be enrolled at HACC to apply for the scholarships.
Students receive scholarships and awards from the HACC Foundation as a result of charitable contributions from private and corporate donors throughout Central Pennsylvania. These scholarships and awards were established to provide educational opportunities for students who are in need, who are studying particular programs, who excel academically, who are involved in community service or who meet other criteria.
The HACC Foundation awarded 2013-14 scholarships to 845 students totaling nearly $1.1 million to be used for tuition and book costs.
Students can apply online through AcademicWorks, a convenient scholarship management system that allows HACC to efficiently match students with relevant scholarship opportunities, manage awards and recognize scholarship donors. Students only need to apply once per cycle and are automatically matched to one or more scholarship opportunities based on specific criteria. An online video tutorial is available to provide instruction on how to easily navigate the scholarship application process.

Veteran Educator Named Vice President of HACC’s Harrisburg Campus
Irvin T. Clark III, Ed.D., is the new vice president of the Harrisburg Campus of HACC, Central Pennsylvania’s Community College. Clark, who was chosen in a national search, joined the College on July 13, 2015.
In his leadership role at HACC, Clark is responsible for the strategic direction and overall operations of the Harrisburg Campus; the achievement of enrollment projection goals; the provision of student support services and programs; fundraising; and the development of partnerships with business, education and government entities.
With 15 years of work in higher education, Clark brings extensive experience in enrollment management, student development and learning outcome assessments. He most recently served as vice president of student affairs at Georgia Piedmont Technical College in DeKalb, Georgia, and previously held leadership roles at three Maryland colleges: Frederick Community College in Frederick, the College of Southern Maryland in Prince Frederick and the Community College of Baltimore County in Catonsville.
In addition to a Doctor of Education in higher education/community college leadership from Morgan State University in Baltimore, Clark holds a master's degree in adult and continuing education and a bachelor's degree in social relations, both from Cheyney University of Pennsylvania, Cheyney.
Clark’s honors and awards include the President’s Innovation Award at Frederick Community College in 2011 and the national League for Innovation in the Community College’s John and Suanne Roueche Excellence Award in 2012 for securing a five-year U.S. Department of Education College Access Grant and creating the college’s first Summer Bridge program.
He also received the President’s Award at the College of Southern Maryland in 2009 for the creation of the institution’s first learning community program for first-year at-risk students; the Outstanding Dissertation Research Award, Graduate School Morgan State University, Department of Higher Education in 2005; and the National Minority Graduate Student Scholarship Award from the College Sports Information Directors of America in 2001.
Save the Date: Annual 5K Run Oct. 3, 2015, at HACC’s Lancaster Campus
Mark your calendars for the third annual 5K Wellness Run at HACC’s Lancaster Campus. This event will be held rain or shine on Oct. 3, 2015, at the campus, 1641 Old Philadelphia Pike.
A kid’s fun run at 8:30 a.m. has been added to the event, with the race starting at 9 a.m. The run is open to everyone and free parking is available.
Registration will be accepted starting Aug. 14, 2015, at the campus Welcome Center. Runners who register through Sept. 17, 2015, pay $15 and are guaranteed an event T-shirt. Those who register after Sept. 17, 2015, will pay $20.

HACC Will Become Tobacco Free Aug. 10, 2015
